Alton Brown’s guacamole mixed with some mediterranean flavors…

Guacamole
This recipe is a mix between Alton Brown’s and my Palestinian friend’s recipes. I like the combination of lime juice, red onion and olive oil mixed from both recipes. It is easy to prepare if you have all the ingredients ready. Also at the end, make sure you keep the avocado seed in the guacamole bowl until serving time, it helps along with the lime juice to keep its color nice.

Ingredients
4 avocados
1 medium diced red onion
2 seeded and diced tomatoes
3 minced garlic cloves
1/2 minced jalapeno pepper (optional for spicy version)
1 tablespoon chopped cilantro
1 1/2  lime juice
1/4 teaspoon cumin
1/2 teaspoon paprika
1/2 tablespoon olive oil
salt and pepper

Scoop the avocados in a bowl but keep the seeds on the side for now. In a medium bowl, mash the avocados along with the lime juice, garlic, cumin, paprika, salt and pepper. Then fold in the onions, tomatoes, jalapeño ,cilantro, and add the olive oil. Place the seeds in the middle of the bowl until serving time then take them away, it helps from browning. Enjoy!
