Spinach with Ground Beef

A lot of Egyptians cook the spinach dish in different variations like with meat, no meat, with eggs….etc. But I was never a big fan. I remember when I was about 8 years old, my mom tried to get me to eat spinach for lunch. She was so unsuccessful and it was a long day for me until she gave up ๐Ÿ™‚ Just looking at the dish was scary to me by itself, too green and leafy!! Until I tried it once at my mother in law, it was not that leafy and not too green, so I started to like it and adjust the recipe till I LOVED it and became a big fan of Spinach.

Ingredients

  • 1 bag of frozen chopped spinach
  • 1/4 teaspoon chili powder
  • 1.5 pounds ground beef
  • 1 big onion diced in small pieces
  • 4 tablespoons tomato paste
  • 1 tsp vinegar
  • 1 tsp all spices
  • 2 minced garlic cloves
  • 1 tsp garlic powder
  • salt and pepper
  • 3 tablespoons oil

In a hot mediumย pot, add some oil to brown the diced onions until light golden color then add the ground beef. Move it around on low heat so it does not stick together. Do not add salt in the beginning until it gets all the meat juices dried up (when that meat juice becomes less visible in the pot).

Add the frozen spinach, spices, garlic and vinegar. Then add the tomato paste and the water (1 – 1 1/2 cup) or as needed to make sure there is a little sauce but not too much. Or you can replace water and tomato paste with tomato sauce if easier. Lower the heat and simmer it for 45 minutes. AND THAT IS IT ๐Ÿ˜ƒ

It is best served with white rice ๐Ÿ™‚

I have a little bit of ground beef and a little bit of spinach in my fridge that needs using. This recipe is going to be my inspiration. I think ill top the rice with a fried egg and I have you to thank for the great idea!
