White beans salad with Egyptian flavors

As you can guess, white beans salad is not an Egyptian dish. However, I cannot see why not to engage some Egyptian flavors in it. I did not have a prepared recipe for that one ahead of time so I just opened my fridge, checked my pantry and went with the flow. As I am trying my best to switch to more healthy alternatives, this salad definitely makes it easier for me to stick to a healthy diet since it tastes really good and refreshing! Enjoy 🙂

Ingredients

1 can of cooked white beans
1 small can of sweet corn
1/2 small onion minced very thinly
1/2 diced bell pepper
1 small diced tomato
2 tbsp chopped cilantro
1 lime juice
1 tsp dried mint
1 tsp ground cumin
1 tbsp olive oil
1 minced garlic (optional)
Salt and pepper

Open the can of beans, wash and drain in a medium bowl.

Dice the red onion really thinly and add it to the white beans and corn.

Add the diced bell peppers, cilantro, tomatoes and mix all together.

Prepare the vinaigrette by mixing the olive oil, lime juice, cumin, dried mint, garlic (optional), salt and pepper.
Pour over the salad and mix well. Set in the fridge for at least 30 minutes before serving.
