
This dish is so easy to put together. It is very healthy and tasty. You can also used the same marination and the way of cooking it for any other type of fish fillets. I can get this fish on the table ready in less than 30 minutes. Enjoy!
Ingredients
4 pieces of Tilapia fillets
2 tablespoons olive oil
1/2 chopped green onion
1/2 diced bell pepper
1/2 diced tomato (optional)
1 lime juice
Little bit of lime zest
4 minced garlic cloves
1 tablespoon of mixed fish spices or a mix of cumin, coriander, paprika and 7 spices together
Salt and pepper
Wash and pat dry the fish fillets.
Sprinkle each fillet with salt and pepper, both sides.
In a separate bowl, mix 1 tablespoon of olive oil with the minced garlic, fish spices and the lime juice.
Pour this mix on the fish and rub both sides.
Add the lime zest and the diced veggies (green onion, bell pepper and the tomatoes) on the fish.
Let it marinate in the fridge if you can for 30 mins, if you do not have time then no worries.
In a baking dish, brush it with olive oil.
Add the fish fillets with all the veggies mix.
