Fillo dough is used a lot in the Egyptian recipes, we usually call it “Golash” and it has nothing to do with the Hungarian Goulash dish. Egyptian recipes may include sweet or savory stuffing in the fillo dough. Those thin flat pastry sheets could be stuffed with nuts and cinnamon or sweet cream for desserts. They could also be stuffed with spinach and cheese or gound beef for the savory type. Usually, th Egyptian recipe requires brushing each sheet with clarified butter until you reach halfway, add the stuffing then add more layers that are also brushed with butter.
The recipe below is a short cut to create same flavors in a very short time and way less calories. I am not using butter and I am also using the stove top instead of baking the fillo dough in the oven. If you have the stuffing ready, this recipe will not take more than 15 minutes. It will look like individual pies or pastries that are crunchy from outside, softer towards the middle with a surprise stuffing. Enjoy!
Ingredients
4 sheets from the fillo dough box (you can save the rest in the freezer or the fridge)
1 egg
1 cup of milk
salt and pepper
Stuffing options
- parmesan+cooked ground beef with some parsley and onions
- parmesan+cooked ground beef with onions and 1 tablespoon tomato paste for more redness
- Mozzarella slices+feta+ground mint or oregano
- Cooked spinach + sour cream+mint and feta
- sliced hot dogs, olives, bell peppers and mozzarella
- whatever you have in the fridge with some cheese
Beat the egg and the milk together.
Sprinkle the eggs mixture with little salt and pepper.
In a medium pan, spray with Pam or 1 tablespoon of corn oil.
Get the stuffing ready and close to you. You need to have everything close as the fillo dough sheets could get hard if exposed to air for long time. So, organize everything close to you.
Add 1 layer of fill dough sheet vertically (y axis) on the pan.
brush the fillo dough sheet with the eggs and milk mix.
Add one more layer horizontally on the top of the other layer (x axis) and brush with the egg and milk mix.
Add one more layer vertically and brush with eggs and milk. Then one more horizontally.
Then add the cooked ground beef.
Sprinkle with the parmesan cheese.
Or any other stuffing.
Fold the layers over each other to cover the stuffing as in the pic below. Each time you fold a layer on the beef, brush with eggs and milk mix.
Turn the heat on and cook each side for few minutes. Keep flipping after each few minutes until golden brown.
