
Shish Tawook is one of the very well known Mediterranean chicken dishes. It could be made from either boneless chicken breasts or more commonly in middle east from the thighs fillets. Both are very very tasty but the thigh cut is usually juicier than the breast cut. In this recipe, I am using the boneless chicken breast cause I like its texture, it is healthier and with the ingredients below it will also be super juicy. The most important step in making the shish tawook is to get the marination right so the tawook will be juicy, it has to include the yogurt and the vinegar and set aside in the fridge for at least 1 hour. If you can set it in the fridge for an overnight, that would be even better and better!
Ingredients
6 boneless thick chicken breast pieces
1 cup yogurt
2 tsp tomato paste (very important)
1 1/2 tbsp white vinegar
1 large lime juice
1 1/2 tbsp olive oil
4 minced garlic cloves
1/2 tsp cinnamon
1/2 tsp paprika
2 tsp all spices
salt and pepper
3 small red onions
2 large bell peppers
2 large tomatos or few cherry tomatoes
In a food processor, chop 1 red onion, 1/2 a bell pepper, 1/2 a tomato, garlic cloves, olive oil, yogurt, cinnamon, all spices, paprika, vinegar, tomato paste, salt and pepper until they become a smooth thick liquid.
Wash and pat dry the chicken.
Cut the chicken into thick pieces.
Sprinkle each piece with salt and pepper.
In a large bowl, pour the marination over the chicken.
Cut the red onions, bell peppers and tomatoes into cubic shapes. You can also use whole cherry tomatoes if easier.
Add the veggies to the chicken and the marination mix.
Set in the fridge for 1 hour.
Get the wooden skewers, add 1 piece of onion then chicken then bell pepper then chicken then a tomato and repeat for a 3 to 4 times.
I will be using an outdoor gas grill preheated to 450 degrees F.
I place the skewers on the top rack for 10 minutes, lower the fire to minimum and close the grill.
Keep the grill closed on low fire for 10 minutes.
Open the grill, flip and close for another 10 minutes.
Now, turn the fire to medium/high, then I place to the bottom rack for more brown colors while watching, 2 to 3 minutes on each side.
