Piccata is one of my favorite dishes at many restaurants specially CheeseCake Factory. However, this recipe is bit different since it uses Mediterranean marination and spices. Its sauce is not that white and creamy but it is more yellowish from the turmeric. My husband and kids loved that dish so much! It is bit heavy but for healthier choice, you can skip the butter and use milk instead of the heavy cream sauce. However, if you go that route, you need the sauce to be a bit thick, so add 1 or 2 teaspoons of cornstarch to cold water and dissolve, then add it to the milk. Hope you like it!
4 boneless chicken breasts
3 tablespoons of sifted flour
1 onion juice (explained below)
1 lemon juice
1 teaspoon paprika
1 teaspoon 7 spices
1 tablespoon greek yogurt
1/4 teaspoon ground cloves
1/2 a lemon sliced
1 tablespoon unsalted butter (optional)
few peppercorns (optional and I would skip after trying them in this recipe, no need)
3 tablespoons extra-virgin olive oil
1 cup heavy whipping cream (you can use milk instead with 1 or 2 teaspoons of cornstarch for lighter choice)
1/4 cup milk
1 teaspoon dried oregano
1 teaspoon turmeric
salt and pepper
1/3 cup fresh parsley, chopped or green onions to garnish
Wash and pat dry the chicken with paper towels.
Using the food processor, mince the onion very small. Now, in a small bowl, use the onion juice by squeezing its juices out using hand. We will use the onion juice and not the actual pieces for marination.
Add the lemon and onion juices to the chicken.
Sprinkle salt and pepper on the chicken for both sides.
Add to the chicken: yogurt,` paprika, ground cloves and 7 spices.
Let it marinate for at least 30 minutes.
After they sizzle a bit, add the pieces of the chicken.
Brown each side for 2 to 3 minutes then flip on the other side.
Now, add the cream, turmeric, oregano and the milk. Stir well.
Add some salt and pepper to taste.
After the cream bubbles. Add the slices of the lemons on the top and broil for few minutes in the oven until it becomes a little bit of golden color.
Garnish with parsley or green onions chives and enjoy!
