
The best thing about this rice dish is that it is a main dish by itself. It makes it easy specially for kids to make sure that they eat some vegetables along with the rice. I made this dish for my husband who is on diet and it has been great for him! He is losing weight already. There are different ways to make it, however I find the recipe below is easier than many others and the flavors are really good. Enjoy!
Ingredients
2 cups basmati rice (long grain)
4 cups hot water or any stock for extra flavors
2 tablespoons vegetable oil (or butter for a less healthy version)
2 minced garlic cloves
4 bay leaves
1 cup peas and carrots
1/4 teaspoon all spices
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1 tablespoon salt or to taste
1/4 teaspoon pepper
In a deep pot, add the oil and on medium heat.
When the oil is bit hot, add the garlic, bay leaves, 7 spices, cinnamon, peas and carrots. Stir for few seconds.
Add the rice and stir few times.
Add the hot water or stock if available, salt, pepper and the turmeric. If stock is not available, water will do or add to it some chicken or vegetable bouillon cube.
Bring to boil then cover and lower the heat to the lowest for 30 minutes.
