In Egypt, there is a famous delicious meal known as “Fiteer”, Fiteer is a pastry that could be stuffed with savory ingredients like sausage, basturma (arabic version of beef jerky), seafood or sweet ingredients like sweet cream, sugar…etc. I will add a separate post for how to make the Fiteer pastry from Scratch, but this is a shortcut to get the savory flavors in an easy way.
- 1 sheet puff pastry
- 1 cup sausage
- 1 cup mozzarrela cheese
- 1/2 cup black olives or green olives pitted and diced
- 1/2 cup sauteed bell peppers (optional)
- 1 beaten egg with 3 tablespoons of water
Preheat oven to 400 degrees F before you start working on the pie.
Unroll the puff pastry into the big rectangle on a non greased pan.
Place the sliced sausages in one right side of the puff pastry.
Place the sauteed bell peppers on the top of the sausage.
Place the olives on the pile.
Place the mozzarella on the rest of the pile.
For spicy: you can sprinkle some chili peppers.
Fold the left side of the puff pastry on the top of the right side.
With the knife, make some opening on the top of the puff pastry so the steam can come out and it does not become too puffed.
Cover the top with the beaten egg wash
Bake until bubbly and browned for about 20 minutes.
